Apple and Onion Bisque

This is not as good as Acorn Squash soup, but it has been substituted on occasional Thanksgivings when we don't want to get too predictable.

Ingredients

1 small onion, minced 1 sweet apple, peeled, cored and diced 1 tsp curry powder 1 tbsp butter 1 cup canned beef broth 3/4 cup water 2 cups heavy cream

Instructions

In a saucepan cook onion and apple with curry powder in butter over moderate heat for 10 to 12 minutes, or until apple is soft. In a blender or food processor puree the apple mixture with beef broth and water. Transfer to pan. Bring to boil. Stir in cream. Can be served heated or chilled.
