Birthday Coconut Cake

This fancy cake has been made by Ned and Will on several occasions -- once for Clark and Sarah's belated birthday party and once for Dorothy's birthday. Ned substituted whole wheat flour for half of the white flour to make us think it is healthier. It gives it a hearty texture. The original recipe calls for the frosting that is included here. The first time Ned thought that "Seven Minute Frosting" took only seven minutes to make; in actuality, it has to be beaten for seven minutes. If you have time to spare, the frosting is good. Otherwise just use ordinary white frosting and sprinkle it with coconut. The whole recipe is designed to be made in the Cuisinart.

Ingredients

7--Minute Frosting 3 3/4 cups sugar 5 egg whites 3/4 cup cold water 3/4 tsp cream of tartar 2 l/2 tsp vanilla extract

Instructions

Combine sugar, egg whites, water and cream of tartar in top of double boiler. Place over boiling water and beat with a hand-held mixer until thick and shiny, about 7 minutes. Remove from heat. Add vanilla and continue beating until thick and of spreading consistency, about 3 minutes. To Make a Chester Birthday Cake: To make this into a Chester Birthday Cake, you need to place one penny, one nickel, one quarter and one button in between the layers of the cake. The cake eater who gets the penny will be happy, but poor; the nickel will be healthy; the quarter will be rich; and the button will marry soon and well. Or something like that. You hear a different story from each Chester. Rumor has it that one birthday, Ned made a cake and put in a quarter every 1 1/2" around the whole perimeter of the cake. Make a Vestal Birthday Cake: Omit the foreign objects in the cake entirely, or else have each guest sign a waiver of liability before sitting down. For Chester OR Vestal Cakes: At least for the childrens' cakes, Magic Comeback Candles are mandatory. The children like blowing out the candles so much, that they might as well relight automatically ten or twelve times until they finally go out.
