California Casserole
In the Vestal household during the 50's and 60's, this was even more of a staple than tuna noodle casserole. No return visit to Iowa would be complete without it.
Ingredients
1 l/2 lb lean hamburger
1 medium onion, chopped
1 can tomato soup plus 1 can water
2 cups medium noodles
1 can pitted ripe olives, drained
cheddar cheese, shredded to cover top
optional: frozen or canned corn
Instructions
Saute onion. Brown hamburger. Add tomato soup and water. Stir in noodles. Cover, cook medium heat about 5 minutes, stirring once or twice. Add olives (and corn). Turn into casserole. Add water if it seems too dry. Bake at 350 degrees about 45 minutes, uncovered. Add cheese for last 10 minutes.
