Chiang Jou Szu (Shredded Pork with Sweet Bean Sauce)

Jo and Joel prepared this for Dorothy Vestal, David Vestal, Allan (Tad) Vestal and all the Chester-Vestals when we descended on them for Christmas in Seattle, '83.

Ingredients

3/4 lb. shredded pork 1/4 tsp salt 1 tbsp dark soy sauce 1 tbsp cornstarch 1 green onion, halved and shredded 3 slices peeled fresh ginger, cut to needle sticks 1 tsp sugar 2 tbsp sweet bean sauce 1 tbsp Chinese cooking wine or dry sherry 1 tsp sesame oil

Instructions

Mix pork with salt, soy and cornstarch and let stand 20 minutes. Place onion and ginger on serving platter. Combine sugar, sweet bean sauce and wine. Fry pork mixture in wok in 5 tbsp oil until partially done. Remove from pan. Heat 3 tbsp oil, add combined seasonings and mix quickly. Return pork to wok. Stir 1 - 2 minutes. Add 1 tsp sesame oil. Serve on top of onion and ginger.
