Chicken Maciel
This is one of Della's contributions. It has one of her trademark touches -- all of her "chicken" recipes are really supposed to be made with turkey because it "tastes better." But the name doesn't change, just the main ingredient. "Maciel" was allegedly the chef at the Gaslight Restaurant at Union Station in Kansas City in the 1950's.
Ingredients
2 lbs cold turkey (or chicken if you insist)
2 oz. sherry
1 pt. cream
1 heaping tsp curry
1 cup raw rice, cooked
3 oz. butter
1 heaping tbsp cornstarch
1/2 tsp paprika
grated Swiss cheese
Instructions
Dice fowl and saute 5 minutes in oil, paprika and curry. In a saucepan, bring 1 pt. cream to boil, add cornstarch previously dissolved in sherry. Stir until thickened and add chicken and mix. serve over rice. Sprinkle with grated Swiss cheese.
