Corn with Basil

This is Ned's answer to Sarah's Curried Corn. Ned picks out his corn by taking a bite out of one ear from each of the vendors at the farmers' market. The losers get paid for one ear; the winner is rewarded with a 3-dozen ear sale.

Ingredients

6 ears fresh sweet corn, cobs removed 3 tablespoons shallots (or white part of scallions) 3/8 cup packed fresh basil 3 tablespoons butter or olive oil 1 red bell pepper, stemmed, seeded and chopped 2 jalapeno peppers, chopped, or dried chili peppers to taste

Instructions

Heat oil in a large skillet. Saute basil until crisp. Add shallots and red pepper and cook until soft. Add jalapenos or chili pepper and corn and saute/steam until corn is just warmed through. Serve immediately.
