Curried Corn
In summer, Sarah starts with only the tenderest of newly picked corn, gently steamed and then carefully cut off the cob. This is the winter recipe and it is almost as good.
Ingredients
2 cups canned or frozen corn, thawed
1/2 cup chopped red pepper
1/2 cup chopped onion
curry to taste
Instructions
Steam red pepper and onion in the microwave until softened. Mix with corn in a saucepan. Heat and add in curry, to taste.
