Della's Rice Pilaf
This is De11a's variation from Trudy Ziegler.
Ingredients
2 cups long grain rice
4 cups beef broth or consomme or water
2/3 stick margarine
3/4 cup celery, chopped
3/4 cup carrots, chopped
3/4 cup parsley, chopped
1/2 cup green onion, chopped
1 cup blanched almonds
Instructions
Heat empty casserole. Bring liquid to boil. Melt butter in heavy skillet. Add rice and stir into the butter, 5 minutes or until lightly browned. Pour into hot casserole dish and add the boiling liquid. Bake (covered) 1/2 hour in 350 degree oven. Remove. Add chopped vegetables and nuts, folding in lightly. 30 minutes before serving return to oven, lid off to warm.
