Dorothy's Tomato Aspic Salad
This was one of Allan Vestal's favorite things, next to pickled pigs feet, beef jerky, hard green apples, hard sausage, Limburger cheese and pickled herring.
Ingredients
4 cups V-8 juice
1 tbsp brown sugar
1/4 cup chopped celery
1/4 cup chopped onion
1 tsp salt (not Dorothy)
2 tbsp unflavored gelatin
juice of 1/2 lemon
Instructions
Simmer in 2 cups of V-8 juice, sugar, onion and salt. Mix gelatin into 1 cup cold V-8 to dissolve. Then combine with hot V-8 and mix well. Add lemon juice to remaining one cup of cold V-8. Then stir into hot mixture. Chill until just beginning to gel, then add vegetables. Pour into mold or baking pan.
