Double Chocolate Pudding

Ned has made this to satisfy Barbara's chocolate craving in the past. It was served to Clark and Sarah on their first visit to Portland, back when we were all childless. Frankly, it has not been served often enough to be a Chester/Vestal edible tradition, but it should become one.

Ingredients

2 oz bitter chocolate pieces, or 2 squares bitter baking chocolate 1 cup minus 2 tbsp sugar 2 cups milk 1/8 tsp salt 3 tbsp cornstarch 3 tbsp unsweetened cocoa 2 tbsp unsalted butter, cut in small pieces 1/2 tsp vanilla Whipped cream, garnish Shaved semisweet chocolate, garnish

Instructions

Chop or grate chocolate. Melt in the top of a double boiler over gently boiling water. Slowly stir in sugar, 1 2/3 cups of milk and salt. Heat, stirring, until chocolate is melted and mixture is blended, about seven minutes.
