Eggplant Betty
Over the years, Betty has grown a lot of different vegetables, ranging from the old standbys -- Early Girls and Big Boy tomatoes, zucchini and green peppers -- to the experimental kohlrabi and edible pea pods. The relatives are always happy to inspect and consume, even though we aren't much help with the real work. This recipe, always a winner, features Betty's eggplant.
Ingredients
1 eggplant
Mayonnaise
Seasoned bread crumbs
Instructions
Slice eggplant in 3/8 inch slices. You can peel the eggplant if you wish, but it is not necessary. Spread on both sides with mayonnaise. Dip each slice in seasoned bread crumbs and place on a cookie sheet. Bake in a 350 degree oven until the bread crumbs begin to brown and the eggplant is softened.
