English Brandy Snaps
Ingredients
1/2 cup melted butter
1/2 cup sugar
1/4 cup dark corn syrup
1/2 cup all-purpose flour
2 tbsp brandy
1/2 tsp ground ginger
1/8 tsp salt
Instructions
Heat oven to 375 degrees. Combine butter, sugar and syrup in small saucepan. Heat over low heat, stirring constantly, until sugar dissolves, 3 to 5 minutes. Remove from heat; stir in remaining ingredients. Drop teaspoons of batter in floured greased 15 x 10 x 1 1/2 inch jelly roll pan, only 4 cookies per pan. Bake until brown, approximately 4 to 5 minutes. Turn cookies over on baking pan with spatula. As soon as they are barely cool enough to touch, roll around handle of a wooden spoon to form rolls. Cool on wire racks. Repeat. (These are actually fairly hard to make so they roll right. You have to catch them at just the right time, but they make interesting looking cookies once you get the knack.)
