Fresh Cream of Tomato Soup
David learned how to make this from summer school instructor, "Uncle Don". This was David and Alex's contribution to Grandmother Della's birthday celebration in July (yes, we celebrated early) '89. Of course, they used tomatoes fresh from Aunt Betty's garden. Ned says the cream can be omitted without harm.
Ingredients
1 small diced onion
1/4 cup butter
2 tbsp flour
6 tomatoes, peeled and quartered
2 cups milk
1/2 cup cream
Instructions
Cook onion in butter. Add tomatoes and simmer. Add 2 tbsp. flour and cook in. Add hot milk. Simmer on low heat. Salt and pepper to taste. Add cream just before serving and warm through without boiling.
