Fried Spring Rolls

These can be served with the same dipping sauces as the fried wontons, above. Again, almost any thing can go in them, depending on what is available. One recipe from Allan, which makes 24, is:

Ingredients

1 package egg roll skins or wrappers 2 cups cooked barbecued pork 5 medium dried mushrooms or 10 tree ears, soaked according to package directions 1 cup bamboo shoots 1 cup shredded napa cabbage or bok choy 1/2 lb. fresh bean sprouts 3 stalks celery (optional) 2 stalks green onion

Instructions

Mince all ingredients except skins and bean sprouts fairly well. Stir fry separately bean sprouts, celery, mushrooms and bamboo shoots, napa cabbage or bok choy. Make up a sauce of 1 tsp salt, 2 tsp sugar, 2 tbsp oyster sauce, 2 tsp cornstarch and 1/4 cup chicken broth. In wok, pour sauce over pork and stir fry until sauce thickens. Put rest of ingredients into wok and mix together. Let sit in refrigerator overnight to meld flavors.
