Green Bean Salad Nedly

This is a much better way to use up green beans than in 3 Bean Salad Medley. This recipe dates back to law school days as well. Over time, the sour cream and mayonnaise has been decreased and the yogurt has been increased. The good taste remains.

Ingredients

1 1/2 lbs fresh green beans 1/2 cup mayonnaise and/or yogurt and/or sour cream 2 scallions chopped black pepper

Instructions

Steam beans until just warmed through. Drain and place in bowl with scallion (which will cook while the beans cool). Add pepper to taste and add mayo/sour cream/yogurt to taste. The flavor improves if it sits in the refrigerator for a couple of hours.
