Hearts of Palm Salad

This is one of Sarah's creations. It is a great change of pace from the boring tossed salad that Barbara is always making. Sarah has served this at many family gatherings, including Bill Chester's 70th birthday party in Boston.

Ingredients

1 can hearts of palm, sliced in 3/8 inch pieces 24 orange sections, membranes removed Russian dressing lemon juice watercress or butter lettuce

Instructions

The only trick here is making the dressing. The Russian dressing is the oil based, not mayonnaise based version, and it is rather sweet, as a rule. Add lemon juice and, if you like, Dijon mustard to give it a bite. Make a bed of watercress or lettuce on each plate. Place the orange sections in like spokes of a wheel on the lettuce. Sprinkle the hearts of palm around and drizzle on the dressing.
