Hoisin Chicken
Simple, elegant, tasty and filling. Everything a buffet dish should be. Sarah has made this for special occasions, including William's christening. The Chester-Egelers couldn't make it to Portland that Sunday, but Sarah sent 10 pounds of hoisin chicken instead.
Ingredients
4 lbs raw chicken breasts
2 lbs seedless green grapes
1 cup of hoisin sauce, or to taste
Instructions
Cut chicken into bite sized cubes. Stir fry in wok or large skillet until almost cooked. Halve the grapes. Add to chicken. Add hoisin sauce to taste, stirring in well. Finish cooking until chicken is cooked through and grapes are warm. Hoisin sauce is available in Chinese markets and the specialty section of large grocery stores. Serve over rice.
