Maine Shrimp, Yogurt and Potatoes Ned
Ned made this one up all by himself. There aren't too many shrimp—potato recipes, but the flavors in this one seem just right when made with fresh, sweet Maine shrimp.
Ingredients
1 lb. cooked Maine shrimp
6 oz. mushrooms, sliced
2 to 3 scallions, chopped with greens
1 tsp. hot pepper oil or tabasco or red pepper flakes, to taste
3 — 5 potatoes, steamed or boiled
Butter, yogurt and sour cream
Instructions
Prepare the potatoes: Mash the potatoes with butter and two parts yogurt to one of sour cream. The potatoes should be left a little chunky. You may want to add a little flour to stiffen them. Prepare the shrimp: In a saucepan, melt a little butter or oil and saute the mushrooms until they sweat out their moisture, and then cook over medium heat with the scallions until the mixture thickens a bit. Add the shrimp and hot oil to taste. Warm the mixture and reduce the heat to just keep it warm. Serve with little nests of potatoes and the shrimp in the middle, or mound the potatoes alongside.
