Orange-Pineapple Chicken
We have never actually tasted this dish but Della says it plays well in Kansas City. The Kansas City Interdependent gave it four stars when Della served it to the Lyric Opera ladies. "A good time was had by all," as Dick Armstrong would say.
Ingredients
4 whole chicken breasts split in half
salt and pepper
2 tbsp curry powder
1/2 cup melted butter
1 cup orange juice
1 large can pineapple chunks, undrained
1/3 cups walnuts
1/2 cups raisins
1/2 tsp cinnamon
1 tbsp flour
2 tbsp water
1 tbsp soy sauce
orange slices and parsley for garnish
Instructions
Preheat oven to 400 degrees. Sprinkle chicken on both sides with salt, pepper and curry, rubbing seasonings well into flesh. Dip in melted butter and place skin side up in shallow baking dish. Bake for 15 minutes, turn and bake 15 minutes longer. While chick- en is browning, in saucepan heat orange juice, pineapple (undrained), walnuts, raisins and cinnamon to a boil. Make paste of flour, water and soy and add to saucepan, stirring until well dissolved. Pour hot mixture over the chicken and reduce oven to 350 de- grees. Bake 45 minutes, basting occasionally. Turn chicken back to skin side up and bake 15 minutes long- er. Remove chicken to warm serving platter, pour pan sauce over it and garnish.
