Southern Spoon Bread

The Vestal children will remember that Dorothy Vestal made this dish with some frequency. We think that this is the correct recipe. It comes from a pamphlet published in 1939, recently passed on to Barbara and Ned by Dorothy.

Ingredients

2 cups corn meal 1 1/2 cups milk 2 cups boiling water 1 tsp salt 3 tbsp butter, melted 3 eggs

Instructions

Sift the meal three times and dissolve in the boiling water, mix until it is smooth and free from any lumps. Add the melted butter and salt. Thin with the milk. Separate the eggs; beat until light; add the yolks and then the whites. Pour into a buttered baking dish and bake in a moderate oven (350 degrees) about 30 minutes. Serve it in the dish in which it is baked. It will collapse some after it is removed from the oven. The kids like it with syrup.
