Spinach Pudding

Dorothy Vestal cooked this frequently. Barbara also makes it for out-of-the-house consumption -- pot luck suppers and the like. Ned's egg allergy and the boys' aversion to spinach mean that it is not a big seller at home. They don't realize what they are missing. Be sure to drain the spinach very well.

Ingredients

2 10 oz pkgs frozen chopped spinach, cooked and drained 2 eggs, beaten 2 cups cottage cheese, drained 1/2 cup Parmesan cheese

Instructions

Mix all ingredients together. Pour into slightly buttered 1 quart casserole. Sprinkle with more Parmesan cheese before baking. Bake 30-45 minutes at 350 degrees.
