Squash and Sausage Casserole
Ned invented this one to take to a First Parish society pot luck supper. People (including Allan W. Vestal, who was visiting and Chief Justice Vincent McKusick) raved.
Ingredients
6-8 medium acorn squash
2 lbs. sausage meat (preferably sweet Italian)
2 red bell peppers, chopped
2 green peppers, chopped
1 cup sour cream or yogurt
Instructions
Preheat oven to 400 degrees. Halve and seed squash. Put 1-1 1/2 tablespoons butter in each squash half. Place on a baking sheet and bake for 1 1/2 hours. Brown sausage meat. Mix with green and red pepper. Scrape flesh from squash into bowl and mix with sour cream or yogurt. Pour into buttered 9 inch round dish. Spread sausage mixture over the squash. Return to oven and bake 15-20 minutes at 350 degrees.
