This Cape Cod traditional fare is best done on the grill, but can also be done on the broiler in times of northern winds or inclement weather. Precise timing is the key.

Ingredients

Fresh swordfish Wishbone Italian salad dressing Lawry salt (optional) Smoke flavoring (optional)

Instructions

Place the fish in a glass or enamel pan and spoon on a couple of tablespoons of Wishbone dressing. Add Lawry salt and smoke flavoring as desired. Marinate in the refrigerator for an hour or so. Heat the charcoal to medium. Add soaked hardwood chips, such a hickory, to the coals. Lightly oil the grill and grill the fish for about 5 minutes per side, per inch thickness. Cover to increase smoke flavor.
