Top of the Summer Delight
Less of a recipe than the quintessential summer taste experience. It usually can't be eaten until mid-August, but the wait is worth it.
Ingredients
3 large, ripe Big Boy tomatoes, fresh from Betty's garden, sliced
one container of cottage cheese
1/3 cup chives, fresh from Betty's herb garden, chopped
Instructions
Place the sliced tomatoes on one plate. In a bowl, combine the cottage cheese and chopped chives. Serve with salt and pepper, and homemade Thousand Island dressing (mayonnaise, chili sauce and lemon juice).
